Together, companies from the food service market sector, federal and regional governments, researchers and NGOs have been pursuing an ambitious goal: Avoidable food waste in kitchen operations is to be reduced incrementally by half by the year 2030.
The implementation is driven by a comprehensive programme. The key savings potentials were identified by measuring the waste volumes in 50 Austrian kitchen operations. In addition, concrete actions for avoiding waste were developed.
In the course of the initiative, a consulting service for the avoidance of food waste in catering operations was developed. This service has been available throughout Austria since the summer of 2016 and is partly integrated in the operational environmental development programmes of the Federal Provinces.
